A few questions;

If I use only 19 pads no aux's is it possible?
Can i skip (not mount) some bat 85 and two 4051 ic's?
What is the alternative parts of 10 uH (inductor)?
What is the function of encoders, do i need to have this?

Yes.

You can exclude all bat85 diodes on the input you're not going to use. Same applies to 4051 ICs.

What is the alternative parts of 10 uH (inductor)?

Any from 1uH - 1mH range.

What is the function of encoders, do i need to have this?

They're optional and used as alternative controls.
