You can use a IDE cable if you already have it (You must cut it).
Or you can buy a 40 pins ribbon cable.

Is it better to separate every cable in the IDE cable, from jacks to 40-pin connector?

I have separated all the cables to half the length of the ribbon cable. The other half is untouch (I mean, with the 40 cables joint)

I ask this because of possible crosstalk in that half of the cable where all the cables are togheter. Or it doesn't matter if you do this so?

It is better to separate the cables, but if the length of your cable is small, there is no problem.

It is about 15cm. I suppose it is quite short

More questions... there are 2 smaller ribbon cables in the "Full Kit Available" post. One looks like it's connected to the LCD and the other to the buttons. What should I use for that?

There are 2 ribbon cable connectors : one (16 pin) for the LCD, one (40 pin) for the 32 inputs.
There are 7 cables with connectors for all others inputs / outputs.

Alright!

Next phase: Front Panel. I got the LCD and 40 pin ribbon ordered. The push buttons are included but I want to find some bigger ones. (My fingers are rather large  )

The power on/off toggle: can I use a "rocker" style switch?
